Ingredients
10 chicken breast steaks
Approx. 300 g white flour
1 tbsp crispy chicken Polish seasoning
1 tsp garlic Italian seasoning
1 tsp dry basil
Approx. 2 eggs
Approx. 200 g cornflake breadcrumbs
1 tbsp salt
Oil
Preparation
In a bowl, add the chicken and sprinkle chicken seasoning, garlic seasoning, basil and mix together, to ensure the chicken is covered evenly in the spices.
Marinate for 30 minutes.
Add flour in a plate, in a separate plate add the breadcrumbs and in a bowl, add the whisked eggs.
Heat the oil on medium heat, in a pan.
Take 1 breast steak, run through the egg, run it through the flour, making sure it’s fully covered, run it again through the egg, making sure it’s covered evenly, then transfer it into the breadcrumbs, making sure it’s fully covered. Repeat with the rest of the steaks.
After the oil in the pan is hot, fry the covered chicken on low heat until golden brown on one side, then flip it over on the other side and fry until evenly golden brown.
Repeat with the rest of the steaks.
Tips
The trick to have a juicy and moist chicken is to leave it in cold water with dissolved bicarbonate of soda, either for at least 1 hour, or ideally, overnight, in the fridge. The chicken might have a particular smell or colour change afterwards, but don’t worry, it’s not gone bad. This will get the chicken juicy and soft after, it’s cooked, as opposed to it being dry.
You might need more or less flour, eggs and breadcrumbs. If you run out of either of them whilst making the steaks, just top up!
