Ingredients
300 g mini chicken breast fillets
5 garlic cloves
200 g Greek style yoghurt
1 tsp smoked paprika
1 cup tomato passata
1 onion
3 chilli peppers
3 roasted peppers
1 tsp chipotle powder
1 tsp cajun seasoning
1 tsp basil
Baby leaf and rocket salad leaves
1 avocado
1 tsp mixed spice seasoning
1 tsp all purpose seasoning
1 tsp ground black pepper
1 tbsp crispy chicken Polish seasoning

Preparation
Add the sliced or minced garlic in the yoghurt. Set aside.
On medium heat, heat oil in a pan and add the sliced onion and fry until golden brown.
Add the diced or sliced chicken and fry for a few minutes, just enough for the chicken to lose the pink colour.
Add the sliced roasted peppers and mix. Cook for a few minutes, then add the paprika, cajun seasoning, chipotle powder, ground black pepper, basil, 2 of the sliced chilli peppers, salt and all purpose seasoning and incorporate everything.
Cook for a few minutes, then add the passata and a splash of water, or you can rinse the bowl you used for the passata and pour the water in. Give it a good mix.
Cook covered until the chicken is cooked.
Add the mixed spice, mix and cook for 5 minutes longer.
Cool down.
Peel and core the avocado and chop into pieces.
Take a tortilla wrap, add chilli slices, mixed salad, approx. 3 tbsp of the cooked chicken and sauce, add a few pieces of avocado.
Top with 1-2 tbsp of garlic yoghurt and more mixed salad leaves and wrap the tortilla.
Tips
The easiest way to wrap the tortilla is to fold the bottom side first, then fold the left and right side on top of each other.. If you don’t want to get messy whilst eating, you can use aluminium foil under the tortilla, before wrapping it and fold the foil around the tortilla, as you fold the bottom up.
