Ingredients
300 g coarsely ground cornmeal
1 litre water
Approx 1 tsp salt
200 g sheep’s cheese
Preparation
Add water in a pan and sprinkle salt.
On low heat, mix the salt and water, but don’t allow the water to heat before adding the polenta.
If the water is not boiling or hot, it will avoid the polenta from forming lumps.
Take a whisk, and at the same time as you pour polenta in the water, whisk vigorously.
Keep whisking and adding polenta until all of it is in there.
Whisk continuously until it thickens to the desired consistency, for around 5-10 minutes. It should feel soft to taste and have the consistency of mashed potatoes. If you use gritty polenta, it will take a bit longer to cook, fine polenta is the quickest.
Add one layer of polenta on a plate, cover with half of the sheep’s cheese, add another layer of polenta and cover with more of the sheep’s cheese.
