Ingredients
300 g pre-boiled rice
300 g frozen vegetable medley
1 onion
6 garlic cloves
1 tbsp butter
2 tsp chipotle powder
1 tsp oregano
All purpose seasoning
Ground black pepper
Salt
Preparation
Melt butter and saute onion for 5 minutes.
Add the sliced garlic and salt and cook for 3 minutes.
Add the vegetables, all purpose seasoning, black pepper, chipotle powder, oregano and mix well.
Cook covered for 5 minutes.
Add the rice and mix well.
Add a bit of water if too dry.
Cook covered for 10 minutes, on low, until everything is cooked.
Tips
Add all purpose seasoning, salt and ground black pepper to your taste. If you don’t have all purpose seasoning, you can add crushed stock cube instead.
