This hearty and flavourful soup is perfect for a cold day. It's made with chunks of beef, vegetables, and rice, all simmered in a flavourful broth. The soup is easy to make and can be customised to your liking. Add more or less vegetables, or use different types of rice. You can also add other ingredients, such as beans or corn .
Ingredients
300 g beef pieces
200 g vegetable medley
1 carrot
1 parsnip
1 potato
1 onion
3 garlic cloves
100 g celeriac
50 g rice
400 g chopped tomatoes in juice tin
Sage
Rosemary
Thyme
Parsley
Salt
Ground black pepper
Preparation
Dice the beef and the onion.
Slice the garlic, carrot and parsnip.
Dice the celeriac and the peeled potato.
In a deep pan, on medium heat, warm up a splash of oil. ( I used flavoured pork fat instead )
Add the onion and fry for 5 minutes.
Add the beef, garlic, sage, rosemary and thyme and fry for a few minutes.
Add the carrot, parsnip, celeriac and the vegetable medley and cook for 5 minutes.
Add the rice and cook for 2 minutes.
Add the chopped tomatoes tin, salt, pepper and water to cover the vegetables.
Boil for 30 minutes, then add the potato.
Boil until everything is cooked.
Taste for salt.
Garnish with parsley and serve!
Tips
You can add even more vegetables, whatever your favourites are. I used frozen vegetable medley, but you can also use mixed vegetables instead.
