Ingredients
5 potatoes
3 carrots
British pork sausages
1 onion
3 garlic cloves
400 g plum tomatoes in juice
200 ml chicken stock
6 tsp oil
3 celery stalks
1 bunch of parsley
1 bunch lovage
Salt
Ground black pepper
All purpose seasoning
Water
Preparation
Peel and dice potatoes.
Slice carrots.
Slice onion.
Slice the garlic.
Take a deep pot and heat up the oil on medium heat. .
Fry the onion for 2 minutes, then add the carrots.
Fry for 3 minutes, then add the garlic and fry for 3 more minutes.
Toss in the potatoes and give it a good mix. Fry for 2 more minutes.
Add the plum tomatoes tin.
Add water to cover potatoes.
Boil for 10 minutes.
Add salt, ground black pepper, all purpose seasoning.
Slice the celery and add in the pot.
Cook covered for 10 minutes.
Add the chicken stock and more water if necessary.
Give it a good mix and cook covered until potatoes and carrots are fully cooked.
Add the end, add the chopped herbs and boil for 5 minutes longer.
In a frying pan, fry the sausages.
Remove from the pan and slice them.
Add the sausages on top of the soup, when you’re serving it.
Tips
Use salt and ground black pepper to taste.
If you don’t have chicken stock, you can replace it with 2 chicken stock cubes.
If you don’t have celery stalks, you can replace it with celeriac.
If you don’t have plum tomatoes tin, you can use chopped tomatoes tin instead.
