Ingredients
100 g mixed fruits
260 g shortcrust pastry
1 cup lemon filling - here’s the recipe:
1 tbsp sugar
Preparation
Dice the fruits.
Add sugar and mix.
Roll shortcrust pastry and place in greased baking dishes.
Take greaseproof paper and place inside each pastry. Add rice or baking beans on it.
Bake for 10 minutes at 180℃
Remove the rice and bake for 10 minutes longer.
Remove from the oven.
Allow to cool for a bit, then add filling and fruits in each pastry.
Return to oven and bake until the pastry is done, it needs to be golden brown.
Garnish with fresh fruits.

You can use any fruits you like. You can also fully bake the pastry cups and fill after they have cooled down.
