Ingredients
Muffins/cupcakes:
Approx. 300 g white flour
200 ml oil
160 g vanilla icing sugar
200 g yoghurt
1 egg
½ tsp Moroccan almond extract
1 tsp baking powder
Filling:
12 tsp lemon curd
Preparation
Add yoghurt, sugar, oil, egg and mix all together.
Gradually add the flour, mixing each time.
Add the baking powder and mix. The batter should have the consistency of sour cream.
Fill the muffin/cupcake cases 3 quarter full.
Bake at 180℃ for 30 minutes or until the muffins are golden brown in colour.
Cool down.
Make a hole in the centre of each muffin and fill with 1 tsp of lemon curd each.
You can use a syringe, a piping bag or a teaspoon.
Tips
