Ingredients
300 g boiled rice
1 onion
2 snack peppers
200 g mixed vegetables
100 g cherry tomatoes
4 garlic cloves
2 tsp turmeric powder
1 tsp cumin seeds
Salt
Ground black pepper
Vegetable seasoning
1 cup of water
Preparation
Dice onions.
In a wok, heat up oil on medium heat.
Add onion and fry for 2 minutes, then add the cumin seeds. Fry for 5 minutes.
Add the sliced peppers and fry until golden brown. Add the sliced garlic and fry for 2 minutes.
Add the mixed vegetables and cook for 5 minutes, mixing occasionally.
Add the cherry tomatoes and keep cooking for 5 minutes longer.
Add salt to taste, vegetable seasoning and ground black pepper. Mix well and cook for 5 minutes.
Add water and cook covered until the vegetables are cooked through.
Add the boiled rice and turmeric.
Mix well and cook covered for 5 more minutes.
Tips
If you use frozen vegetables, the cooking time will be shorter than using fresh vegetables.
