Chicken & Semolina Dumplings Clear Soup
Ingredients :
2 eggs
6 tbsp (120 g) semolina
4 chicken drumsticks
1 onion
3 medium carrots
1 chicken stock cube
All purpose seasoning
Salt
Ground black pepper
2 celery stalks
1 bunch of parsley
Preparation
-for the dumplings
Separate egg yolks from egg whites.
Whisk the egg whites with salt until light and fluffy.
Keep aside 2 tbsp of semolina. Fold in the rest of the semolina into the egg white, bit by bit and mix well. Leave the mix aside for a few minutes.
Add the egg yolks into the mixture and fold to incorporate everything.
Add the remaining 2 tbsp of semolina, incorporate everything well and set aside.
Bring water to boil. I like to add a sprinkle of all purpose seasoning in the water. You can add instead of water, liquid from the soup, by preparing the soup first.
Using a tablespoon, take half tablespoon of semolina and shape it, then drop the mix in the boiling water. Repeat with the rest of the mix and boil the dumplings for 10 minutes, or until the semolina is boiled.
The dumplings should be fluffy and light when they are ready.

In a pot, over medium heat, add the halved onion, the chicken drumsticks, the sliced carrots, the whole celery stalks, the stock cube and fill with hot water, to cover the chicken and rest of the ingredients.
Bring to boil.
Add all purpose seasoning, salt, ground black pepper.
Give it a good mix and boil.
Boil for min 30 minutes, or until the chicken and veggies are all cooked.
Once the soup is ready, remove the onion and celery from it.
In a serving bowl, add dumplings and pour soup over.
Tips
If you want tastier dumplings, instead of water to boil them in, use liquid from the soup !
