Welcome to our Easter Recipe Swap! In this post, we're going to show you how to make a delicious Romanian Salată de Boeuf with a twist that will add a new flavour to your Easter table. Salată de Boeuf, also known as Beef Salad, is a traditional Romanian dish that is typically made with boiled potatoes, carrots, peas, and diced beef. In this recipe, we're going to give it a unique twist by adding some unexpected ingredients that will elevate the flavours and make it even more delicious. Ingredients
1 kg chicken breast
3 carrots
3 parsnips
2 potatoes
4 whole grilled peppers in brine
15 gherkins
300 g garden peas
150 g sweetcorn
150 g green/black olives
150 g mayonnaise
1 stock cube
1 bunch parsley
Salt
Ground black pepper
All purpose seasoning
Preparation
Except for the chicken and potatoes, set aside a few slices of the veggies and peas, to use for garnish/decoration.
Cut the chicken, carrots and parsnips in chunks and boil them.
Parsnips will boil quicker, so you will need to remove them earlier than the rest.
Separately, peel and cut potatoes in squares and boil them on their own.
Whilst the chicken and veggies are boiling, in a deep dish/bowl, add the peas, sweetcorn, sliced olives, cubed gherkins, sliced peppers and chopped parsley.
Once the chicken and veggies are boiled, cool them down, cut them in cubes and add them in the bowl with the rest.
Add mayonnaise, salt, pepper, all purpose seasoning and chopped parsley. Mix well to incorporate everything. Add a thin layer of mayonnaise on the top, then add the veggies you saved, as garnish/decoration.
Chill in the fridge before serving.
Tips
Best served cold! The original recipe asks for beef, so if you are looking for the proper taste as a traditional dish, use beef instead of chicken!
