Ingredients
280g gluten-free puff pastry
3-4 apples
1 tsp cinnamon
4 tbsp white sugar
2 tbsp white flour
100 g raisins
3 tbsp dark brown soft sugar
2 tbsp breadcrumbs
1 egg + 1 tsp water
Icing sugar for dusting
Preparation
Pre-heat the oven to 190℃.
Peel, core and cut the apples.
In a bowl, add the apples, 2 tbsp white sugar, cinnamon, 1 tbsp brown sugar and the flour.
Mix well and leave aside for 20 minutes.
In another bowl, mix 2 tbsp of brown sugar with the other 2 tbsp of white sugar, the breadcrumbs and raisins.
On a floured surface, roll the puff pastry in a rectangle.
Spread the apple mix layer.
Add on top, the sugar and raisins layer.
Roll the pastry tight.
Add to the baking tray, wash with egg mixed with water and slice the top.
Bake for 40-45 minutes, until the strudel turns golden brown.
When the strudel is ready, dust icing sugar on top.
Tips
For extra deliciousness, you can add crushed nuts as well and if you are looking for a gluten-free option, replace white flour with almond flour.
