Ingredients
4 litres whole goat’s milk
500 ml fresh cream or 227 g clotted cream
1 lemon
4 tsp salt
Preparation
In a large pan, pour the milk, the cream, mix well and bring to 50℃.
After it reaches the temperature, remove from heat and keep covered for around 30 minutes.
Add salt in.
Squeeze the lemon in.
Place back on low heat and mix until it curdles.
Remove from heat and strain it.
Place in a container and refrigerate for at least 2 weeks.
Tips
The more it stays in the fridge before being consumed, the more it matures. If it doesn’t curdle using 1 lemon, add some extra vinegar, but it will leave an aroma.
