A very versatile recipe for dumplings, made with semolina. You can add your
own flavouring to them, your own spices, you can serve them with anything you like, in soup,
as a side to meat dishes, or even as a meal on it's own.
INGREDIENTS:
2 eggs
6 tbsp (120 g) semolina
Sprinkle of salt
DIRECTIONS:
Separate egg yolks from egg whites. Whisk the egg whites with salt until light and fluffy.
Keep aside 2 tbsp of semolina. Fold in the rest of the semolina into the egg white, bit by bit and
mix well.Leave the mix aside for a few minutes.
Add the egg yolks into the mixture and fold to incorporate everything. Add the remaining 2 tbsp
of semolina, incorporate everything well and set aside.
Bring water to boil. I like to add a sprinkle of all purpose seasoning in the water.
Using a tablespoon, take half tablespoon of semolina and shape it, then drop the mix in the
boiling water. Repeat with the rest of the mix and boil the dumplings for 10 minutes, or until
the semolina is boiled.
The dumplings should be fluffy and light when they are ready.
You can serve them on their own, or add them into soup, or serve them as a side to meat.
