The festive season is here. Try this lemon curd muffins recipe with Christmas tree decorations from lemon curd buttercream for that extra special holiday treat. These are not too sweet, really moist and melting in the mouth, the buttercream is the perfect balance in taste and very easy to pipe for those Christmas decorations, but not only.
Lemon Curd Christmas Tree Muffins Recipe: INGREDIENTS FOR 12 CUPCAKES/MUFFINS : Muffins: 200 ml oil 160g vanilla icing sugar 200g plain yoghurt Approx. 300g flour 1 egg 1/2 tsp Moroccan almond extract 1 tsp baking powder Filling: 12 tsp lemon curd Buttercream + Décor: 200g butter 200g lemon curd(take away the 12 tsp for the filling) 80g icing sugar Green food colouring Christmas decorations DIRECTIONS: For the muffins: Add yoghurt, sugar, oil, egg and mix . Add the flour bit by bit and the baking powder and mix well, to incorporate everything. This should have a consistency of sour cream (thick). Fill the muffin cases/cupcake cases 3 quarter full. Bake at 180 degrees Celsius for 30 minutes. Cool down, then make a hole in each muffin and add 1 teaspoon of lemon curd per muffin. For the buttercream: Mix soft butter with the icing sugar until is soft and fluffy. Add the remaining lemon curd. Mix well and chill for a few minutes. Separate the buttercream in different bowls if you want to use different colours and colour each buttercream. For décor : Once the muffins are cooled down, filled with lemon curd, you can start piping the buttercream and place any other Christmas decorations you'd like.
